I’ve made a few cookie dough cakes in the past (like my funfetti cookie dough cake and my ultimate cookie dough cake), but I felt like it was time to put a different spin on my classic edible cookie dough recipe. That’s where these no bake cookie dough bites come in.
I love them because they’re super easy to make and are such a fun way to satisfy your sweet tooth.
While you might just want to enjoy them as a snack, you can also use them to top your favorite desserts or even to decorate cupcakes or cake.
Why Are These Cookie Dough Bites Is Safe To Eat Raw?
These cookie dough bites are safe to be consumed raw for two reasons.
The first is that this recipe doesn’t use eggs! The second reason is that the flour is heated to a safe temperature before being added into the dough.
How To Heat Treat Your Flour
To ensure your cookie dough is safe to eat raw, I recommend heating up your flour in either your microwave or your oven.
Heat Treating with a Microwave
I know it sounds a little crazy, but if you heat your flour for a little over a minute it should be good to go!
I like to heat the flour in 30 second intervals and stir between to prevent the flour from browning. This also helps it heat more evenly.
Be sure that the internal temperature of your bowl of flour reaches 160 F / 72 C. I like to use a digital kitchen thermometer to check.
Heat Treating with an Oven
If you don’t want to use a microwave you can also heat treat your flour in the oven! It’s a very similar process to the microwave.
Preheat your oven to 300 F and bake your flour on a large parchment lined pan.
It usually takes about 12 minutes for the internal temperature of the flour to reach 160 F. I recommend stirring the flour every 2-3 minutes to prevent it from browning.
Cookie Dough Bites – Ingredients & Substitutions
While I love these cookie dough bites just the way they are, I know some of you might not have all of these ingredients on hand!
Below are some swaps and substitutions that can be made in this recipe.
- Salted Butter – If you only have unsalted butter on hand, you can use it in place of the salted butter. Just be sure to add in 1/2 tsp of salt to enhance and balance the flavors in this recipe.
- Brown Sugar – You can use light or dark brown sugar, but I prefer this recipe with light brown sugar. I don’t recommend using regular granulated sugar or a less refined sugar. They can throw off the texture and taste of the cookie dough.
- All Purpose Flour – You can use a gluten free flour blend in place of the all purpose flour in to make gluten free cookie dough bites. Just be sure to use a good blend like King Arthur’s GF flour.
- Chocolate chips – You can use any type of chocolate chips or chunks! I suggest using your favorite type of chocolate and cutting them up into small pieces to make the cookie dough balls easier to roll out.
- Rainbow Sprinkles – I recommend using the long and skinny sprinkles like the ones in the photo below (jimmies). Nonpareil sprinkles can bleed into the cookie dough, so avoid using them in this recipe. The pretty sprinkles I used are made by Sweetapolita!
Tips for Making the Best No Bake Cookie Dough Bites
- Heat your flour in the microwave or oven to pasteurize it and make it safe to eat raw.
- Fold the sprinkles and chocolate chips into the dough by hand so they don’t break as they get worked into the dough.
- Feel free to add your favorite mix-ins! I used mini chocolate chips and rainbow sprinkles, but white chocolate chips, bits of candy, or chopped nuts would all be delicious.
- Do not to use more than 2/3 cup of mix ins or else the dough will have a hard time sticking together.
- Use a 1/2 tsp measure to make uniformly sized bits of cookie dough.
- Chill the bits of cookie dough in the freezer for 10 minutes after they’re rolled out to help their shape set.
- Drizzle them with melted chocolate and top with sprinkles to dress up these cookie dough bites.
- Make gluten free cookie dough bites by using your favorite gluten free flour blend in place of the all purpose flour.
- Make vegan cookie dough bites by using vegan butter and vegan chocolate chips.
Making These No Bake Cookie Dough Bites in Advance & Storage Tips
These no bake cookie dough bites can be made in advance! They keep in the fridge for up to 2 weeks or up to 1 month in the freezer (if you can resist eating it that long).
I like to roll out the cookie dough bits and drizzle them with chocolate, then freeze them in an airtight container once the chocolate hardens.
My advice? Enjoy them straight out of the freezer on a hot day. They’re the ultimate afternoon pick me up.

Ingredients
No Bake Cookie Dough Bites
- 1/2 cup salted butter, room temperature (112g)
- 3/4 cup light brown sugar, packed (133g)
- 2 tsp vanilla extract (8g)
- 3/4 cup heat-treated and cooled all-purpose or gluten free flour - see instructions in the post above (100g)
- 1/3 cup mini or chopped up chocolate chips (60g)
- 1/3 cup rainbow sprinkles (56g)
Chocolate Drizzle
- 1/4 cup chocolate chips (45g)
Instructions
No Bake Cookie Dough Bites:
- Line a large baking sheet or tray with parchment paper and set aside.
- Cream together 1/2 cup room temperature butter and 3/4 cup light brown sugar in a large bowl and mix on a high speed with either a hand mixer or stand mixer.
- Add in 2 tsp vanilla extract. Mix on a low speed until incorporated.
- Mix in 3/4 cup heat-treated flour on a low speed. Scrape the sides of the bowl with a rubber spatula as needed.
- Fold in 1/3 cup mini or chopped up chocolate chips and 1/3 cup rainbow sprinkles with a rubber spatula.
- Use a 1/2 tsp measure to scoop uniform amounts of cookie dough, then roll them into small balls and place on the lined pan or tray.
- Chill in the freezer for 10 minutes to help set their shape.
- While the cookie dough bites chill, place 1/4 cup of chocolate chips into a piping bag and seal the top with a rubber band. Heat in the microwave in 15 second intervals, squeezing the bag between intervals to help the chocolate melt.
- Once the chocolate is fully melted, snip a tiny opening at the bottom of the bag and drizzle the melted chocolate over the chilled bits of cookie dough.
- If desired, top with an additional handful of sprinkles and enjoy!
- These cookie dough bites can sit at room temperature for up to a day, in the fridge for 2 weeks or in the freezer for up to a month. I recommend storing them in an airtight container or large freezer bag.
