First off I want to say you are amazing and have changed how I bake. So thank you for that! But I have a question about taking unfilled shells out of the freezer, do I just leave them out to defrost and then fill them? Or fill them while they are still frozen and keep them in the fridge?
I premade a bunch for my sister in laws shower and they are perfect, I don’t want to mess them up right at the end!

Hi Flora,

I worry that the extra oil from the zest could cause some of the shells to crack. However, I haven’t tried so I’m not sure! I really like to leave the shells alone and pack the filling with flavor. If you try it though I’d love to hear how it goes!!
